Course Description

This course provides an integrated approach to understanding the fundamental principles of nutrition and their application in cooking and food preparation. Students will explore basic nutritional concepts, develop skills to identify reliable dietary information, and gain hands-on experience preparing healthy recipes using safe and effective cooking methods. The course also delves into different cuisines' cultural and historical contexts, offering an interdisciplinary and holistic view of food beyond its role as mere sustenance. Additionally, the course introduces an intuitive eating philosophy, encouraging students to cultivate a healthy relationship with food through mindful and reflective practices.

About the Instructor(s): Arlin Diaz Torres

Arlin Diaz Torres, a graduate of UNM with a bachelor of science in Nutrition and Dietetics, is currently pursuing his Combined Master of Science and Dietetic Internship at UNM. His career goal is to become a Registered Dietitian Nutritionist (RDN) focusing on diabetes and/or kidney disease-related care. He was awarded the Susan Deese-Roberts Outstanding Teaching Assistant award in the 2023-2024 school year and was invited to teach an undergraduate course of his choice for the Honors College for Spring 2025. With over three years of experience in Nutrition education at UNM, Arlin has served in various roles, including Nutrition Peer Learning Facilitator (PLF), Online Learning Assistant (OLA), Graduate Assistant, and Graduate Teaching Assistant for NUTR 1110 & 2110. Beyond the university setting, he has also been a Nutrition Educator teaching elementary children how to cook!
